Instead of vacuum packing entire meals for the whole family, divide individual portion sizes and pack them in smaller bags. Very convenient for 72 hour kits, camping, & even keeping in your storage supply for quick preparation! (Or if mom's gone or sick, & kids/hubbies need to fend for themselves. This is what I would call convenience food!)
On his website, he shows divided up breakfast, lunch, dinner, dessert, snacks, etc... & gives ideas for each one. Some of his food choices aren't once I'd choose, but the general idea is GREAT!
One note he did make (and I taught this in my food storage classes a couple of years ago) is this... Pack liquids (such as syrup or oil), & some seasonings in small "sampler" size bags & insert those into the bigger bags separate from the food. This keeps ingredients from touching until preparation time - (Helps avoid rancidity & spoilage due to liquid foods coming into contact with dry foods).
This same concept can also be done with canning jars. Purchase the vacuum seal attachment (eBay & Amazon are great) - & vacuum pack them in various sized jars. Family meals in half gallon or quart jars, & individual sizes in pint or 1/2 pint jars. Using this method, you're actually benefiting quite a bit. Your food will stay fresher much longer, you're being kind to the environment, & you're being kind to your body by avoiding the effects of the chemicals that leach from the plastic into the food. (Speaking of which... I'll be doing a post on plastic, because there's a lot of info that most are unaware of.)
Anyway... Similar to this, a while back I came across a lady who did her entire year's worth of food storage in canning jars. She had a small family at the time & packed 365 quart jars with dehydrated meals. She may have had other canned items to go along with it, but she was set with these planned out meals! And everything was homemade with her own dehydrator, so she knew exactly where her food came from :) Since then, quite a few people have followed suite & done the same kinds of things. How convenient to have your storage meals planned out & packaged, ready to go! No meal planning in the middle of an emergency (or on a camping trip) & almost no thinking required! What a GREAT idea!
