THE BAD STUFF:
Modified sugar, using a chemical refining process.
Also known as Sucralose.
Studies on splenda:
There have only been six human trials to date. The longest trial lasted only three months.
No studies have been done on children or pregnant women.
Splenda bears more chemical similarity to DDT than it does to sugar.
Fat soluble substances, such as DDT, can remain in your body for decades and devastate your health.
What is DDT? It's a very toxic pesticide, & it's banned in the US.

Splenda decreases the size of the thymus, which produces and houses T-lymphocytes
(white blood cells responsible for eliminating certain infections and potentially malignant cells)
Increases the pH of fecal matter - which can lead to colorectal cancer
Alters the intestinal microflora which causes gastrointestinal distress
Over time, it affects P-glycoprotein & reduces the body's good / beneficial bacteria.

- Skin -- Redness, itching, swelling, blistering, weeping, crusting, rash, eruptions, or hives.
- Lungs -- Wheezing, tightness, cough, or shortness of breath.

Aspartame causes fibromyalgia symptoms.
If heated to over 86 degrees, the wood alcohol converts to formaldehyde
& then to formic acid, which causes metabolic acidosis.
Disease begins to manifest & thrive when your body is in a state of metabolic acidosis.
Methanol toxicity mimics multiple sclerosis (MS) & systemic lupus.
It changes the brain's chemistry, causes seizures, changes the dopamine level in the brain,

HIGH FRUCTOSE CORN SYRUP
CORN SYRUP / CORN SUGAR
A monster-refined cornstarch derived product that is cheap and easily available,
thanks to the government subsidy of the super sized GMO (genetically modified = FAKE) corn industry.
HFCS is linked to fatty liver disease, & a myriad of other health conditions.
HFCS is seeking to re-brand itself now as "corn sugar".
So if you see corn sugar on a label, don't get too excited. It's still the same junk.

Well... We all use it, right? (I used too. But not anymore.)
Basically, they've taken the botanical grass/cereal grain known as sugar cane, & the cultivated plant 'beta vulgaris' - or sugar beet... and stripped them of every nutrient & mineral that ever existed in its natural form.
Then, once it's passed the refining stage, it is chemically processed to create the white substance you buy at the grocery store. "Way back when"... people used to chew on pure sugar cane, & it not only strengthened their teeth,
but it was also full of nutrients & actually nourished their teeth!
Chemicals used in the sugar refining process: Sulfur dioxide, Phosphoric acid, and Calcium hydroxide.

Brown sugar is white sugar - mixed with a little molasses.
Still refined... still chemically processed... still very very bad for you.

Read below about coconut palm sugar, which makes the perfect brown sugar substitute.
Unrefined rapadura, unrefined sucanat, & unrefined evaporated cane juice also have
a heavier caramel taste that makes a great substitute for brown sugar.
OR to make your own brown sugar substitute with xylitol:
Mix 1 c. xylitol with 1 Tb. unsulfured black strap molasses & stir well.
THE GOOD STUFF!

Stevia, a zero-calorie non-glycemic sweetener, is actually an herb. The green stevia plant is pure & unrefined. I have grown it myself. Just dry it & throw it in a small blender or processor to powder. A tiny amount goes a long way. It's on average 300 times sweeter than sugar! Using too much can sometimes leave a bitter aftertaste.
I use stevia in drinks, smoothies, puddings, pies, candies, etc...
If you're planning to use it in cakes, breads, cookies, etc...
I would suggest buying a cookbook on stevia :)
White powder stevia & stevia extract have been processed.
It's considered a safer sweetener than white sugar,
& I use it on occasion but not very often.
BUT - if you're going for 100%, choose the pure green herb itself.
Be careful to read labels. Some stevia products are often not pure stevia.
Common brands (like Truvia & others) are blended with sugar & other junk.
COCONUT PALM SUGAR
The juice is extracted from the blossom of the coconut palm tree. It is simply the crystallized form of the juice.
It is FULL of nutrients. Palm sugar has a nutty flavor, is brown in color, & well... It reminds me a LOT of brown sugar!
I use it in all recipes that call for brown sugar & most recipes that call for white sugar,
although it's not as sweet as white or brown sugar
It's also low on the glycemic index (if you're worried about that)...
PS: It is best to find 100% organic palm sugar in bulk.

AGAVE NECTAR (?)

Yes, there has been some controversy about agave.
Food Renegade website has an article about the dangers of agave HERE,
but Xagave's website has an article refuting Food Renegade's entire post HERE.
Wholesome Sweeteners also has a rebuttal you can take a look at HERE.
So I would read up on it, & go with what you feel good about.
Personally, I use Xagave or Oijo brand, & occasionally Wholesome Sweeteners.
Raw version is healthiest, FYI.

I was 100% hooked, then I was questioning it a bit. Now I'm down the middle.
I use xylitol on a VERY limited basis now, & not all the time, because it is processed.
But I haven't kicked it totally out of my pantry for the time being.
Xylitol is a sugar alcohol. It's been around for years &years.
I own a book on the benefits of xylitol, & there's a lot of information out there
when it comes to the healing benefits of xylitol.
It's been known to help prevent cavities & aid in healing respiratory ailments.
Xylitol generally comes from the birch tree or corn.
If & when I use it, I always look for an organic (NON-GMO) brand, preferably birch tree derived.
Once melted or dissolved, xylitol will not re-crystalize & is not good for making hard candies.
It also has a slightly cool sensation when it's not cooked or mixed with other ingredients.

There are a lot of others out there to research also. Again, I don't think it's the best choice of sweeteners, but I also don't think it's the worst. There are definitely opinions on both sides. We do use it on a limited bases.

NOTE: Xylitol is HIGHLY poisonous to dogs! Why dogs - but not other animals? I don't know.
But please do not leave xylitol or foods made with it, out & around areas where your dogs could reach it!
100% MAPLE SYRUP (GRADE B)
Grade B still has most nutrients, where grade A is more refined/processed & has less nutrients.
This is simply the sap from a maple tree & can be used for A LOT more than just pancakes & waffles!
MOLASSES - (BLACK STRAP, UNSULFURED)
Molasses is made from the juices from sugar cane, sugar beets or grapes.
It's boiled down to a thick syrup by-product & still contains nutrients like magnesium, iron, potassium and calcium.
Blackstrap molasses is unsulphured, which means it doesn't contain processed chemicals & is made from organic sugar cane.
DATES / DATE SUGAR
Dehydrated & powdered dates. Plain & simple. FULL of nutrients!
Un-refined sugar. Period. Nutrients still in tact.
EVAPORATED CANE JUICE
Crystalized juice from the sugar cane. Organic is best.
It's still lightly processed in many cases, but not as much as regular sugar.
Sometimes refined, sometimes not. Read the labels, & look at the color.
It should be opaque & not look like crystals. It should look more like little tiny rough tan colored rocks.
