This is my electric tortilla maker:
FINALLY, I have found the Roll's Royce of tortillas! Thank you to 100 Days of Real Food for your nearly perfect tortilla! These flatten out suuuuuuuuper thin, they're tasty, & they're healthy! Here's how to do it (Click on the photos above for a closer up view, if you'd like):
2 1/2 c. whole wheat flour (I use fresh ground red or white wheat)
1/2 c. oil (She uses avocado oil, I use olive oil. You could also use coconut oil)
1 tsp. un-refined salt (I use pink Himalayan salt)
1 c. warm water

Mix flour, oil, & salt in a mixer until crumbly (3-5 mins). Scrape sides as needed.
Gradually add warm water & continue mixing until dough is smooth (about 3 more mins).
Add a little oil to your hands so the dough doesn't stick.
Divide dough into 12 equal pieces (Roll into a log & cut in half - then each of those 2 sections in half - then those 4 sections into 3rds - until you have 12)
Roll each piece in a ball & flatten just a little bit. Let sit (covered) on a cookie sheet or plate for at least 15 mins or up to 1 hour.
Heat tortilla maker or skillet/griddle on med-high heat.
Roll out each piece with rolling pin (or use tortilla maker to flatten, as I did) & cook until slightly puffy and brown (about 30-45 seconds on each side).
After each one is done, put on a plate & use a large pot lid to cover so they stay moist & warm.
Top with your favorite toppings & enjoy! (We used refried beans, lettuce, tomatoes, mozzarella cheese, sour cream, & enchilada sauce as the above right photo shows)
These can be refrigerated or frozen if not used right away. I have only made these on the tortilla maker, so you may have to experiment, if you're using a griddle or skillet.
***Next time I make these, I'm going to omit some water & add a little bit of raw honey to give it a sweeter taste. I'm thinking this might make good peanut butter & honey/jam roll ups... Yum!

UPDATED RECIPE (We like these better, & it makes more!)
4 1/2 - 5 c. whole wheat flour (may need more flour, if you're rolling them out with a rolling pin & not using a tortilla maker)
1 c. oil (coconut or avocado if possible... if not, use olive)
2 tsp. unrefined salt (Pink Himalayan or REAL salt)
1/2 c. raw honey or raw organic agave
1 1/2 c. water
Roll out or flatten with tortilla maker & cook as above! :)
