Those little M & M looking things are colored with vegetables & herbs. They're sweetened with evaporated cane juice. The carob chips are also sweetened with evaporated cane juice. So for an every once in a while treat for the kids (or yourself)... I say go for it!
For this recipe, you can use either ready made granola or homemade granola. There are VERY few commercial granolas I "approve" of for my family, but the one brand I occasionally use is Nature's Path Organic. This particular recipe above was made with their Coconut-Chia version. Our favorite!
Here we go:
3 c. granola
3/4 c. raw honey
1/2 c. coconut palm sugar (or sucanat, or xylitol)
1/2 c. plain & natural peanut butter (I love to make my own in my Blendtec with peanuts & coconut oil)
1/2 c. nuts, carob/chocolate chips, shredded coconut, or whatever else you like
Bring honey & sugar to a boil. Remove from heat & stir in peanut butter. Mix well.
Add granola & nuts/chips & stir. Press mixture into a 9x9 pan (I put waxed paper on top & push fairly hard to mold it into the pan)...
Let stand until set (can cool in fridge for faster setting) & cut into bars or squares. Cover pan with air tight cover or store in other airtight container.
