5 c. regular rolled oats
1/2 c. coconut, shredded (UN-sweetened)
1 1/2 c. sunflower seeds (or other chopped nut) - raw is best
2 T. ground flax / chia seeds
Mix the above items in a large bowl.

Melt the following 7 ingredients in a pot, stirring constantly until dissolved. Don't let it boil!
3/4 c. unrefined sweetener (sucanat, rapidura, coconut palm sugar, etc.)
3/4 c. water
3/4 c. coconut oil or olive oil
1/4 c. raw honey
3/4 tsp. Sea or Himalayan salt
1 tsp. cinnamon
1 1/2 tsp. vanilla
Pour over dry mix, spread in jelly roll pan (or large casserole dish) & bake at 300 degrees for at about 30 minutes, stirring slightly half way through cooking. ***For a crunchier granola, cook longer.
Let cool, then add 1 1/2 cups of dried fruit (cranberries, strawberries, raisins, blueberries, raspberries, etc.)
Store in air tight container. This granola is SUPER yummy cold OR hot!
