You can use this in raw milk as above (or store "milk", if you drink that... but I do not advise it for THESE reasons)... or almond milk, coconut milk, rice milk, etc... It's also great over homemade ice cream or other desserts. My 9 year old son eats it right off the spoon!
Play with the taste & adjust cacao/sweetener if you need too. We've gotten used to "not super sweet" in our home, but you can go as sweet as you like. Note: If you're not a big fan of it right off the spoon, DON'T throw it out! Sweeten it more or pour some into milk (or over dessert) & taste it first. That might change your mind :)
1 c. filtered water
1/4-1/3 c. raw cacao or carob powder - (**a good dark organic cocoa powder will work, but raw cacao is definitely better & healthier)
1/4 tsp. vanilla
1/2 c. + organic grade B maple syrup, raw honey, or raw agave (to taste)
Pinch of unrefined Himalayan or Sea Salt
1/2 tsp. guar gum
Mix all ingredients & heat over stove until boiling.
Stir constantly until thickened. If it's not thickening, add a little more guar gum. I use a whisk, so the guar gum doesn't get clumpy.
(Stevia is optional. You may find it sweet enough without it, but if it's still too bitter, add a tiny bit of stevia to taste. The green powdered herb itself or a few drops of extract will work. Keep tasting as you go.)
When it's slightly thickened, let it cool a little, then pour it into a glass jar or other pourable container. Store in refrigerator. It will thicken more as it sits.
Add 2-3 Tbs. (or tsp., or whatever tastes good to you) to a cup of your choice of milk & enjoy!
**Cocoa powder (even organic) has been processed. I can't use it, because it gives me severe heartburn. In fact, if you have heartburn issues & eat chocolate, this could very well be one of your problems. Try raw cacao instead. It doesn't bother me at all. Yay!
