1 tsp. baking powder (aluminum free)
1/2 tsp. baking soda
1/4 tsp. Himalayan or unrefined sea salt
3 bananas - mashed
1/3 c. raw unfiltered honey (or raw agave)
1/4 c. melted butter
***Add a few crushed nuts such as walnuts or pecans (I don't measure... I just pour them in!)
***Add a few unrefined chocolate/carob chips, if you want too. YUM! My favorite brand of chocolate chips is "Enjoy Life" - or you can make your own chocolate OR carob chips! (Recipe HERE)
Combine all ingredients except flour & mix well. Add flour slowly & mix until lumps are gone.
Fill muffin cups with or without liners (I used the little teeny mini-muffin cups)
Bake at 350 for 15-20 minutes or until the top bounces back when touched.
Don't over-bake these. They're soooooo much better when they're super moist! :)
NOTE: IF you have dehydrated bananas, you can reconstitute them (equivalent to 2 bananas) by soaking them in warm water until soft & the mash. You can also use dehydrated butter & eggs, if you're in an emergency situation & can't get fresh.
