Need I say more?
1 1/2 c. dry quinoa, rinsed (cook according to package or internet directions HERE)
2 c. fresh berries (blueberries, raspberries, strawberries, etc.)
1/2 c. chopped pecans or almonds
1/4 c. unsweetened shredded coconut (optional, but it's super yummy)
1 T. chia seeds (optional)
Combine above ingredients.
4 Tbs. pure maple syrup, raw honey, or raw organic agave
2 tsp. balsamic vinegar
2 Tbs. fresh lime juice (or lemon)
Good pinch of unrefined salt (We use pink Himalayan)
Stir well, & pour over top of cooked quinoa & fruit/nut mix.
Chill in refrigerator, if ingredients aren't already cold. ((I rinse the quinoa in cold water, in a strainer, after it's done cooking. This cools it off a lot faster, so you don't have to wait as long to eat it!!!))
