Yes, I picked the one in the photo up, so you could see the detail of this lovely piece of wholesome food art! :o)
This makes for a great breakfast (an alternative to hash browns), snack, or lunch/dinner.
All I did was this:
1- Thin slice organic red potatoes (or your favorite type of potato) with a mandoline slicer.
2- Heat up coconut oil in a large fry-pan to medium heat (I think I started with about 2-3 Tbs & added more as needed)
3- Sprinkle unrefined organic seasoned Himalayan salt (or un-seasoned) into melted coconut oil.
4- Place a layer of potato slices into the pan. Pour a little more salt on top of potatoes.
5- Keep heat at a med-low to medium temperature (just enough to sizzle) & let brown on each side. Once it's brown & slightly crispy (or as crispy as you want them), remove them from the pan & endulge!
***I make sure to "fry" my foods on lower heat. It takes a little longer, but it's healthier. More nutrients are saved (not killed) when it's cooked at lower heat.
We either make our own ketchup or purchase a good un-refined organic brand from the natural food store, & these potatoes are DIVINE with a good ketchup! :)
