2 1/4 cups whole wheat flour (find ground on pastry setting, if you have your own grinder)
1 1/2 teaspoons baking powder
1 1/2 teaspoons pink Himalayan salt (or other unrefined salt)
2 1/2 cups coconut palm sugar (we use Madhava brand from Amazon)
3 large eggs (or flax seed eggs - instructions at the bottom of THIS post)
1 1/4 cups unsalted butter (organic, grass fed, & preferably raw, if possible)
2 1/2 teaspoons pure vanilla extract
1 cup Enjoy Life brand mini chocolate chips (junk free!) - We get ours from Vitacost & Amazon
Grease a 9x13" baking pan with butter or coconut oil. Line bottom of pan with parchment paper. Grease and flour parchment paper.
Cook butter over medium heat until it browns slightly. (Don't let it burn!)
Mix eggs, butter, vanilla, & coconut sugar in a mixer. Add dry ingredients & beat until fluffy (2-3 mins). Add dry ingredients & mix until thoroughly combined.
Pour into pan & bake on 350 for 35-40 minutes (or until toothpick comes out clean)
Let cool, cut, & enjoy!
***If you're trying to get used to the more intense flavor of coconut sugar - you can substitute 1/2 c. of it for organic evaporated cane juice crystals. Chances are though, you'll be like most people & not even be able to tell the difference!
***You could try cutting the whole wheat flour down to 2 1/8 cups & add 1/8 c. raw cacao (or baking cocoa) for a more chocolatey taste, if you're in the mood for chocolate. But honestly, these actually taste really close to a regular brownie, so I don't even feel the need to mess with it!
***One of these days I'm going to experiment & try using coconut oil instead of butter. I'll let you know if they turn out, & please do the same, if you try it! My goal is to figure out a completely plant based brownie that actually tastes & has the texture of a real brownie :)
