2 1/2 c. blanched almond flour (Honeyville brand is the BEST I've found. Bob's Red Mill brand will not work well because of its course texture. Check your local Costco for Honeyville almond flour...)
1/2 tsp. Pink Himalayan Salt (or any other un-refined salt)
1/2 tsp. baking soda
1/2 c. organic un-refined coconut oil - melted over low heat in pot - or grapeseed oil (I use Nutiva brand coconut oil from Costco)
1/2 c. organic raw agave nectar, raw honey, or coconut palm sugar (I use Xagave or Oijo brand raw agave nectar ONLY, local raw honey, or Madhava coconut palm sugar from Amazon)
1 Tbs. of vanilla extract (I use Better Body Foods brand with no sugar)1 c. dark organic chocolate chips or carob chips (I use Enjoy Life brand choc. chips. I also use the bulk carob chips at my local Fred Meyer as opposed to the ones at Winco & most of the ones online I've found that are LOADED with tons of junk)
Mix all ingredients together very well. Form 1" balls (I use a cookie scoop) & space every 2" on a cookie sheet lined with parchment paper. Flatten slightly. Bake at 350° for 7-9 minutes, or until slightly browned on edges.
***Our family thinks these taste best when they're cooled down.
